Easy Pasta Primavera Recipe

It is a HOT one today in New York, and all of the vegetables are ready for harvest. I am going to share my late grandmother's SUPER EASY pasta primavera recipe. You can use or add any veggies on hand! I add grilled chicken on occasion to make it a complete meal.

2 Red Onions
3 Peppers, Red and Yellow
2 Baby Eggplants
2 Zucchini
1/4 c. Extra Virgin Olive Oil
1 T. Balsamic Vinegar
4 Cloves of Garlic Crushed
Salt & Pepper to Taste
1 T. Fresh Parsley
Grated Parmesan Cheese
1/2 C. Chicken Stock (or vegetable)
1 pound of Your Favorite Pasta

Chop up onions, peppers, eggplant, and zucchini (add more veggies if you want). Mix with oil, vinegar, and garlic. Roast for 30 minutes at 450 degrees, broil for the last 2 minutes. Remove from oven, mix with salt, pepper, parsley, broth, and pasta. Top with parmesan cheese.
